  1. Holding the mango horizontally, cut it in two lengthwise, slightly off-center, so the knife just misses the stone.

  2. Repeat on the other side so a thin layer of flesh remains around the stone.

  3. Slash the mango flesh in a lattice, cutting down to but not through the peel. Repeat with the other half of the mango.

  4. Holding the mango flesh upwards, carefully push the center of the peel with your thumbs to turn it inside out, opening the cuts in the flesh. Cut the mango cubes from the peel.
