Popular name for the Chinese mustard cabbage. It resembles a head of lettuce, but its leaves are much more fibrous with uneven edges and thick stalks. A popular green in Vietnamese dishes, such as soups and stir-fries. It’s so tough that it doesn’t wilt quickly. When cooked, the taste becomes milder.
