Be sure to weigh flours when weight measures are given. Two cups of sifted southern flour weigh only 8 ounces; two cups of unsifted all-purpose flour weigh more than 9 ounces.
The weight measures of flour are not always given in the recipes for unleavened crackers or for breads and cakes that are artificially leavened with baking powder. Beaten eggs aren’t so forgiving.
