An Indian state that lies south of the state of Orissa and north of Chennai (Madras), on the eastern coast. The principal city is Hyderabad, which is known for its Moghul-style cuisine adapted to tropical ingredients. Outside Hyderabad the state is primarily Hindu, with a cuisine that resembles that of Tamil Nadu, its neighbor to the south. It has its own versions of the crepelike breads called dosas (see Onion Skillet Breads) and of the dal called sambhar. See also.
