These large, usually round wrappers, made from wheat flour and water, are soft and sufficiently pliant to roll. They are cooked on a griddle, packaged in plastic, and sold by weight. Usually they come 15 to 25 to the package, and are 6 to 6½ inches in diameter. Like other wrappers, they are found in the refrigerated section of the market. Square spring roll wrappers, 8 inches square, are also sold and, like the round wrappers, are in the refrigerated section. Sometimes spring roll wrappers, both round and square, are erroneously labeled “egg roll skins.” If the wrappers are white, which you should be able to see through the plastic packaging, they can be used to make spring rolls. Both square and round wrappers are also available frozen. Thaw and allow to come to room temperature before using. The storage rules for dumpling wrappers apply here as well.
