We use arrowroot powder to thicken recipes and absorb moisture in breadings. It is similar to cornstarch yet superior. We prefer arrowroot’s neutral flavor and more resilient nature. Arrowroot isn’t starchy when undercooked, will still be effective when cooked for a long time, and can be used with acidic liquids (unlike cornstarch).
