The recipes in this book always use whole wheat flour. You want the fiber and, especially, the protein and nutrients from the whole grain. It tends to be coarser than all-purpose flour, so for baked goods, we often use whole wheat pastry flour, which is finely ground but nutritionally the same as regular whole wheat flour.
