An umami-rich paste made from pickled, salted sour plums. The color comes from red shiso leaves. Ume plums are good for digestion, and the Japanese use them to help nausea (and hangovers). They are also thought to promote stamina and were a part of the samurais’ field rations! The salty-sour taste helps combat dry mouth on long runs. You can find them in the Asian aisle of most grocery stores.
