REMARKS Maximum length to 300 cm. Colour variable. The upper jaw projects slightly beyond the lower one. The conger hides by day and comes out to feed at night.

CUISINE Good to eat, especially the dark-coloured specimens. Some may find the conger rather smelly and flat-tasting, but it is esteemed in Turkey, for example, and by no means despised in France.
