  • About

Family Sparidae

* This and other similar fish which are sold in ready-cut thick slices may be presented under the name tranca, which is simply a version of the French word ‘tranche’.

REMARKS Maximum length is 100 cm. Colour varies according to age and may also change somewhat – e.g. spots disappearing within a short time of death. Young adults normally have steel-blue backs and silver sides. The pectoral fins have a reddish tint. Very large specimens are apt to be of what Bini calls a vinous reddish hue.
