Family Mugilidae

REMARKS Maximum length 50 cm.

CUISINE For all grey mullet. Taken from clean water the grey mullet are all excellent to eat. They are relatively free of tiresome small bones. The small ones are best charcoal-grilled. Large ones may be baked, grilled (try putting a sprig of rosemary inside) or poached in a court-bouillon. Serve hot or cold. Good with couscous.
