REMARKS Maximum length 47 cm. The back is usually brown or a yellowish grey.

Incidentally, this is one of the species with a wide range of local names in Italy, e.g. lengua (Genoa), palaia (in the Naples area), sfoglia (Ancona), sfogio (at Venice) and linguata (Sicily).

Some authorities assert that the sole should be classified in two sub-species: Solea vulgaris vulgaris Quensel and Solea vulgaris aegyptiaca Chabanaud. The former inhabits the eastern Atlantic, the northern parts of the Mediterranean and the south-western part of the Black Sea; the latter ranges along the North African coast to the Suez Canal. The distinction, if valid, would seem to be of small import to the cook.
