REMARKS Only 3 cm long, dark in colour with broken lines following the course of the spirals.

Many of the names for this and other gastropods which can move around like snails are words meaning snail.

CUISINE Bring some sea or salted water to the boil, preferably with black pepper, thyme and a bay leaf, and cook the bigorneaux in this for about 15 minutes. They may then be taken out of their shells easily on the point of a pin. Good. May also be used in bouillabaisse.
