The flavour-to-effort ratio of this superb spice is off the scale, which makes it my store-cupboard essential. The bright red powder is made of ground wood-smoked peppers and/or chillies, which have a massive smoky taste. You can add it to any savoury dish to inject some flavour, as well as using it in salsas, marinades, rubs and salad dressings.
