A centrifuge is a machine with a rapidly rotating container that uses centrifugal force to separate out ingredients according to their density. They spin the pulp from fruit to make juices, or the solids out of nut milks; we use also use ours a lot for clarifying syrups. The big problem for the home user is their size. The centrifuges we use at the bar are massive – with a 3-litre (6-pint) capacity they take up a lot of space and one of ours weighs about 150kg (330lb). You can buy a small benchtop one that sits on your kitchen counter that can do 300ml (10fl oz) and will give you an idea of what a centrifuge can do. They’re fairly inexpensive – about £200 (US$255).
