I will rarely take the time to peel a potato. As long as they are scrubbed clean, then I will happily add them to whatever I am making. Keeping the skin on only adds to a dish, bringing the benefit of extra earthy flavour and fibre. There are exceptions to this rule, but added to a curry, stew or soup, there is no need to peel.
