Like little pots of gold on the forest floor, girolles burst onto the scene after a mushroom drought in the wild.
As spring goes into summer, the first flush of girolles are suddenly in abundance. Tiny golden shoots spring up, growing in a trail of little clusters that follow on for what seems like forever, making them pleasant to forage and resulting in nice full baskets for chefs, greengrocers and markets, who all keenly await them.
