The word chaura refers to both the black-eyed pea and the whole tender green pod of Vigna unguiculata v.sesquipedalis. The closest thing we have in the United States to the tender green-bean stage of black-eyed peas is the long bean. These may look like long string beans, but they are definitely different. Parsis have several ways of enjoying them. They can be cooked with meat or by themselves.
