How to make a bain marie

A bain marie is a water bath, used to help things bake gently without drying. Although you can buy special utensils, I find a roasting pan quite adequate for the purpose. Place the dish(es) to be baked in a roasting pan and pour in enough boiling water to come two-thirds of the way up the dish(es). Place in the oven and bake as directed.
