Cumin

Sometimes confused with caraway seeds because they look similar, cumin is used for the various spice pastes and curry powders in this book. It is earthy, counterbalancing the heady spiciness of dishes it is used in. Yet, cumin can also be bitter, so be sure not to add more than is required.
