This mild but sprightly ginger condiment is usually served as a palate cleanser at a sushi bar. It is an ingredient in several sushi recipes in this book, but could be served alongside any sushi dish.

Amazu shōga is sold in glass jars or hermetically sealed plastic tubs and bags. It does not have to be refrigerated until the package has been opened. Most often, the pink pickled ginger is broadly and thinly sliced, but sometimes it is cut in julienne strips. Some brands are more intensely pink than others; the natural color is a very pale peach or yellow. Almost all brands contain some food coloring to heighten the natural blush shade that results from the chemical interaction between fresh, very young ginger shoots and rice vinegar. Pickled ginger will keep, covered and refrigerated, for many months.
