Use these for potato sautés, omelettes and pancakes. Heavy-duty frying pans, such as cast iron, are best, since they maintain a steady heat level and the food is less likely to burn. Frying pans with ovenproof handles allow you to transfer food from the hob to the oven to finish cooking.
