Making tagliatelle

The tagliatelle may be dried on a floured tea towel hanging over the back of a chair for 1-2 hours.

Pass the sheet of pasta through a floured pasta machine fitted with the tagliatelle attachment. Or roll up the sheet of pasta and cut into ribbons with a knife. Cook immediately or leave to dry in a single layer.
