Italy has a wonderful bounty of peperoni which give color and flavor to a great many dishes. Green peppers have a fresh, young taste. As they mature on the vine they often turn red or yellow, acquiring a more distinctive flavor. When red or yellow peppers are available, use them to improvise sauces made with foods of other colors and textures.
