Silicone baking mats and moulds are one of the most evolutionary technological advances in modern pâtisserie. Not only can you bake cakes, they can also be used to build entremets and petits gâteaux, available in a limitless array of shapes and sizes. The pâtisserie cabinet of today can be eye-catching in shapes as well as colours.

Flat non-stick baking mats I generally use silicone mats, which are flexible sheets of a non-stick material that can withstand extreme temperatures and are reusable. You can buy them in cook shops or online. Siliconized baking paper also works well.
