Chikisalunga, a creek in Lancaster County, is an Indian name meaning “place where crayfish burrow.” Crayfish were considered a delicacy among the Pennsylvania Germans in the eighteenth and nineteenth centuries. Der Amerikanische Bauer in 1851 published a long article on techniques for catching crayfish for culinary purposes.
