Black Peppercorns

These are green peppercorns harvested at a later stage. They are usually picked when one or two berries on the spike have changed colour to bright orange or purple โ€“ a sign that they are close to maturity. The berries are spread out to dry in the sun, and over a few days change from green to rich brown to the familiar wrinkled black.
