If you have skinny shreds of mozzarella, they’ll melt fast. I recommend keeping cheese in its original ball and tearing pieces as needed. If the mozz is cold, you’ll need a smaller piece. If it’s room-temperature or warm, larger pieces. The speed the cheese melts will be determined by its thermal density. In general, for white pies, shredded mozz or small pieces close together are key for them to spread in the oven before the unexposed dough burns. If you put a pizza in the oven, there’s a difference between the crust, which is thicker, and the thin dough in the middle, which turns black and burns quickly. If that happens, your day is ruined. So, good coverage.
