A condiment/side dish that is offered at almost every meal in Korea. Kimchi is a mixture of salted and fermented vegetables, gochugaru, scallions, garlic, and ginger that can be eaten alone or added to other dishes. Similarly, kimchi liquid can be used to add heat and tangy, fermented flavor to many dishes.
