A type of blue-green alga that is found in alkaline lakes in subtropical areas. Spirulina was first consumed by the Aztecs, and has recently regained popularity due to its high protein content, essential amino acids, minerals, vitamins, and antioxidants. Spirulina can be used in many recipes, including desserts, green smoothies, and plant-based cheeses.
