Psyllium husk is a magical baking ingredient. A soluble fiber derived from a plant, it has the ability to absorb water and create a mucilaginous texture which acts as a binder in baked goods. Like ground flax seeds, it can act as an egg replacer. Psyllium is available as whole psyllium husk or psyllium powder. Although they’re not the same, they’re interchangeable where 3 teaspoons of whole husk are equivalent to 2½ teaspoons of powder. You can find psyllium in most health food stores and online.
