  • About
Landscape presentation can include elements of traditional presentation, free-form presentation, or both, but almost always includes painterly swipes or lines of sauces and beds of greens that create depth with a more forceful direction. Movement usually goes from one side to the other or around the plate, and is syncopated by other elements such as peas, droplets, or microgreens, with elements of one type usually serving as the demarcation line between different components of a dish. Think of an impressionist painting, with a hazy blue background interrupted by mountains and a green shrub in the foreground. Plate painting is typically involved, as is an emphasis on vertical lines and structures.
