Damask rose

As petals and as an essence (rosewater), this is an important ingredient in all of the Middle East (and beyond), but these dramatically beautiful and inebriatingly aromatic roses appear in more than just Iranian food; they feature in poetry and art, too. Everything you see, touch and eat in Iran has an aftertaste of roses, even if not detectable at first bite.
