Evaporated milk is produced by heating whole milk to remove approximately 60 percent of the water content. It is then sterilized and canned. It can be reconstituted—made into whole milk again—by mixing it with an equal amount of water by volume. Condensed milk starts the same way, although it is usually not sterilized. Evaporated milk is also available as sweetened condensed milk, which contains 50 percent sugar. See Sweetened condensed milk.
