Curing salt

Used for numerous charcuterie items, especially those that are cold smoked. It is a blend of 94 percent salt and 6 percent sodium nitrite and commonly colored pink to differentiate it from other salt varieties. An acceptable replacement for curing salt is saltpeter, which is simply sodium nitrite.
