This is table salt but without the additives. There is a range of textures available, from fine to coarse, as well as differing salinity levels between brands. Many people are in the Con Agra Diamond Crystal camp because it is the finest in texture and dissolves the most quickly and evenly in baking projects. Diamond Crystal is also less salty than other salts, so I often almost double the amount called for in recipes. I tend to buy Morton Kosher Salt because it is coarser and so does well as a finishing salt when I’m out of flake salt. It is the saltiest of the koshers, so I end up using about half as much as other salts. You’ll have to taste around and decide to which tribe you belong.
