What kind of white wine to serve with meat is, as you can imagine, a conundrum we have considered a great deal, given our name and what lots of our guests come to us for. Luckily there are more options than you might think. Skilled winemakers around the world have started to pay more attention to their whites in recent years, meaning the range and complexity available in the UK has grown hugely. With the added effect of global warming, there are more and more complex, full-bodied white wines that stand up very capably to the most carnivorous menu plan. A great example is Albillo, the fat Spanish white grape that is sun-ripened west of Madrid. It’s now being treated fantastically by a handful of brilliant winemakers, creating a bold but complex white ideal with meat.
