Every cook needs a good knife, and it pays to keep it sharp since it makes preparing food much quicker, easier and safer. Having a few in different sizes can be useful, ranging from a small one for fine work to a heavy one for chopping up meat and tougher vegetables. Japanese knives are especially revered, although they can be pricey. You should also have a couple of good chopping boards.
