You may already have one on the top shelf of your pantry. They are not very expensive and, for the purposes of this book, not essential. I do not use manual pasta machines for flattening or stretching dough because the results obtained with a rolling pin are far superior. You should use the manual machine only for cutting noodles. But with a bit of practice this can be done by hand with a knife.
