Because ligurian cuisine is not, by its nature, fancy — although it is quite sophisticated — it evolved without requiring its practitioners to have all sorts of equipment and gadgets to make it work. There is only one indispensable item, the mortar and pestle, and for you to succeed as a Ligurian cook you must invest in one. You will probably want a pan dedicated to baking focaccia, a working surface to make doughs, a pot large enough to properly boil pasta, and knives and pasta wheels for cutting.
