Wine is described in more detail. The four leading Ligurian grapes are Pigato and Vermentino (both whites) and Rossese and Dolcetto (reds). If you cannot locate Ligurian wines, you may use a Dolcetto from Piedmont as a red and either a Vermentino or a Vernaccia di San Gimignano from Tuscany as a white. It is often stated that the Vernaccia originated near Vernazza in the Cinqueterre in Liguria, but I have not seen enough credible documentation to verify this assertion.
