Alligator pepper this spice is related to the ginger family and named for the pod it comes in which has bumps similar to an alligator’s back. It is also known as ‘grains of paradise’, mbongo spice and melegueta. It has a lemony, peppery flavour with a hint of black cardamom. Use as you would peppercorns or cardamom. It is highly prized in West Africa.
