Allspice sometimes known as ‘pimento berries’ or ‘Jamaican pepper’. Allspice is essential in Jamaican cooking, especially in jerk dishes where the berries infuse the marinade and the wood is used to cook the food. It is so named because it seems to combine the taste of cinnamon bark, nutmeg and cloves. It can also be used in sweet dishes that would use these spices.
