Bonito a type of non-endangered tuna fish. It is a staple in Japanese cuisine. It is fermented, dried and flaked before being used like fish sauce or Worcestershire sauce to add a savoury flavour to dishes as a garnish or a condiment. The flakes are known as katsuo bushi.
