Callaloo it is both the Jamaican and Guyanese name for amaranth leaves and the name of a cooked dish made with seafood, salt pork, coconut milk and the leaves of the amaranth or taro plants. This dish is derived from a West African speciality called palava, which is similar to callaloo but also contains okra. Callaloo is often thought of as the national dish of Trinidad.
