Cassava a starchy root known as manioc in Brazil, yuca in Colombia and ‘tapioca’ in India. It is eaten as a root vegetable, ground into flour known as fufu or dried into pearls which are eaten in milk puddings in the UK or fermented into gari in Ghana. It is an extremely versatile ingredient, but can be difficult to digest in large quantities.
