Cho cho these edible gourds look like a bright green thin-skinned squash with a deep wrinkle in the base. They are known as christophene in Trinidad, chayote in Central and South America and mirliton in Creole and Cajun cooking. Cho cho is the Jamaican name for them. They are used in a similar fashion to summer squash or round courgettes. They have a crisp texture and light taste that absorbs flavours well.
