Galangal a rhizome often confused with ginger, this is a crucial ingredient in Thai cooking. Smoother skinned than ginger, with attractive pink rings, it is less sweet and more peppery and can be peeled and cooked in the same fashion. It can also be bought dried or powdered, but its unique taste cannot be substituted with anything else.
