Jerk this name describes both a seasoning and a method of cooking, particularly associated with Jamaica. It is most commonly associated with chicken, but is used with pork and fish as well. The food is marinaded in a jerk seasoning made from allspice, thyme and scotch bonnet peppers. It is then cooked in a jerk drum (a lidded barbecue made from an oil drum) over charcoal made from the wood of the allspice tree for a unique smoky flavour.
