Kaffir limes these are squat wrinkled little limes, essential to Thai cooking. Every part, including the leaves, is used. The flavour and aroma is unlike anything else. The leaves are now quite easy to find outside Thailand and can be dried or frozen until needed. You can sometimes get the dried rind at Chinese supermarkets โ it will be labelled pima grood. The plants grow well in most climates, allowing you to use the rind and juice more easily.
